500 gm Boiled rice, soaked for 20 minutes (about 180g)

Green Coriander Masala Paste
Instructions
Gather Fresh coriander, Mint leaves, Garlic, Ginger, Cumin seeds & Green chilli.
Grinde to a fine paste add small amount of water to facilitate grinding.
Preparing the Masala
Heat Oil in a Kadai add Cashew, fry lightly and remove
Now add Dry red chilli, Cardamom & clove, fry lightly
Add mustard seeds and let it splutter
Now add Urad and Chana Dal and sauté lightly
Now add sliced red onion & Curry leaf
Sauté until the onions are translucent
Add Turmeric powder and the green paste
Sauté until oil oozes out, add salt.
Now add Boiled rice
Mix the rice well to coat evenly and your delicious coriander rice is ready.
