Instructions
Rinse coriander, ginger, and green chilies.
In a grinder, blend coriander, ginger, green chilies, and roasted cumin powder with a splash of buttermilk until smooth.
Pour the paste into the buttermilk and mix well.
For the tempering, heat oil in a pan. Add mustard seeds, let them crackle, then add chopped curry leaves and fry briefly.
Pour the tempering into the chilled buttermilk and mix.
Serve chilled, preferably over ice cubes.
