Ingredients

Green Paste Coriander Masala Paste

  • 1 Cup Fresh coriander
  • 15-20 no Fresh mint leaves
  • 2 no Green Chilli
  • 1/4 tsp Black Pepper corn
  • 1/ inch Fresh ginger
  • 6-7 no Garlic cloves
  • 1 tsp Cumin seeds

Coriander rice masala

  • 2 tbsp Vegetable Oil
  • 8-10 no Cashew
  • 1/2 tsp Curry Leaf
  • 1/2 tsp Chana dal
  • 1 tsp Urad Dal
  • 1/8 tsp Hing Asafoetida
  • 1 Small Onion Sliced
  • 2 no Green Cardamom
  • 1/2 Inch Cinnamon
  • 3 no Clove
  • 2 no Bedgi Dry Red Chilli or Kashmiri Red Chilli
  • 1 tsp Black Mustard Seeds
  • 1/2 tsp Turmeric powder
  • 1/2 tbsp Salt
  • 1 Cup Ponni/ kolam/Sona masoori rice 500 gm Boiled rice, soaked for 20 minutes (about 180g)
  • Green Coriander Masala Paste

Instructions

  • Gather Fresh coriander, Mint leaves, Garlic, Ginger, Cumin seeds & Green chilli.

  • Grinde to a fine paste add small amount of water to facilitate grinding.

Preparing the Masala

  • Heat Oil in a Kadai add Cashew, fry lightly and remove

  • Now add Dry red chilli, Cardamom & clove, fry lightly

  • Sauté until the onions are translucent
